You just received your can of matcha. You open it, prepare your first latte... and then you wonder: how do I make sure it stays just as good in two weeks?
Good question. Matcha is a living product — and like any living product, it has enemies. The good news: with a few simple steps, you can keep your matcha flavorful for much longer. We'll explain everything.
But first, the best advice we can give you: enjoy your matcha while it's at its best. There's a Chinese proverb that says:
花开堪折直须折,莫待无花空折枝 "When the flower blossoms, pluck it without delay — do not wait until there are no more flowers to reach for an empty branch."
Freshly opened matcha is when it gives its all — color, aroma, umami. The rest of this article is about tips to preserve that quality for as long as possible.
Japanese tea masters have a concept for this: 一期一会 (ichigo ichie) — each cup is a unique encounter, a moment to be fully lived. Enjoy your matcha while it gives you its best.
Why matcha deteriorates — the science, simplified
Matcha is an ultra-fine powder of ground tea leaves. This fineness is what gives it its silky texture and intense flavor — but it's also what makes it fragile. Each grain of powder exposes a huge surface to the outside world.
When this powder comes into contact with air, a natural chemical process begins: oxidation. This is the exact same phenomenon that browns a cut apple. Except with matcha, it's less noticeable initially — and by the time you realize it, it's often already too late.
Specifically, oxidation degrades chlorophyll — the pigment responsible for matcha's vibrant green color. Chlorophyll gradually transforms into pheophytin, a brownish-yellow compound. This is why poorly stored matcha first loses its color before losing its taste (Roca et al., 2022).
In parallel, catechins (the natural antioxidants in tea) and theanine (the amino acid responsible for umami) also degrade, especially at high temperatures. A Korean study showed that the higher the storage temperature, the faster the degradation of catechins — even in a sealed package (Kim et al., 2020).
In summary: air, light, heat, and humidity are the four enemies of your matcha.
The 4 enemies of matcha
1. Air (oxygen)
This is enemy number one. Every time you open your can or pouch, oxygen enters and begins to oxidize the powder. The larger the exposed surface, the faster the process — and matcha, reduced to microscopic particles, offers a considerable exposed surface area.
2. Light
UV and visible light accelerate the degradation of chlorophyll. This is a photochemical reaction: photons literally break down the green pigment molecules. This is why quality matcha is always packaged in an opaque container — never in a transparent glass jar.
3. Heat
Chemical degradation reactions accelerate with temperature. A study by the Quality Control department of Ito-en — Japan's largest tea producer — demonstrated that matcha stored at 4°C showed no noticeable color degradation, while at 37°C degradation became unacceptable in just 3 to 4 weeks. At 25°C or less, matcha maintained its characteristics for 24 weeks (Haraguchi et al., 2002).
4. Humidity (and odors)
Matcha is hygroscopic — it naturally absorbs moisture from the ambient air. Water acts as a catalyst for oxidation, accelerating all degradation reactions. And since matcha also absorbs odors, storage near odorous foods (onion, cheese, spices) can irremediably alter its taste.
Before opening: no stress
Sealed matcha in its original packaging, stored at room temperature in a dry place away from light, will keep for up to 24 months without issue.
If you want to store it long-term (e.g., you bought several cans in advance), the fridge or even the freezer are good options — with two important conditions:
1. Only put unopened containers in the freezer. An already opened container has already been exposed to air and humidity — freezing it will only trap that moisture inside.
2. When you take a can out of the freezer, do not open it immediately. First, transfer it to the refrigerator overnight, then let it return to room temperature for 10 to 15 minutes before opening. This gradual transition (freezer → fridge → room temperature) avoids thermal shock and the condensation that would form if a frozen object directly encountered ambient air — because this condensation would introduce moisture directly into the powder.
After opening: the right steps
This is where it all happens. Once opened, your matcha begins to oxidize with each exposure to air. Here's how to slow down the process:
Close immediately after use. Never leave your can open while preparing your latte. Take your dose, close it right away.
Remove air. If you're using a pouch, press it to squeeze out as much air as possible before resealing. The less oxygen inside, the slower the oxidation process.
Consume within 4 weeks. At moderate room temperature (20-22°C), this is the ideal window to enjoy the best of your matcha — color, taste, texture. Beyond that, degradation becomes noticeable: the color turns dull yellowish-green and the umami fades.
No wet spoon. Never dip a wet utensil into your powder. Residual moisture triggers local micro-oxidation and can create clumps.
Keep away from the stove, oven, and windows. Heat and direct light are the most powerful accelerators of degradation.
Hot climate, humid climate: increased vigilance
All storage durations mentioned in this article are based on storage at moderate room temperature — around 20-22°C, in a dry environment. But if you live in a tropical or humid climate, the reality is very different.
In Tahiti, for example — where Chalala Tea was born — the ambient temperature hovers around 28-32°C all year round, with humidity often above 80%. In these conditions, oxidation and chlorophyll degradation accelerate significantly. The 4 weeks of optimal storage at room temperature are reduced to 2 to 3 weeks — sometimes less if the can is opened frequently.
This is why refrigeration becomes almost essential in hot climates — not a luxury, but a necessity. Double-bagging in the fridge is no longer an "option for perfectionists": it's the minimum to keep your matcha at its best.
And even in Europe or North America, remember to adapt your habits according to the season. In winter, a dry, temperate cupboard works very well. But in summer — especially during heatwaves where indoor temperatures easily exceed 28-30°C — the fridge becomes your best ally. The Ito-en study confirms this: beyond 25°C, degradation accelerates measurably, even in a sealed package (Haraguchi et al., 2002).
The simple rule: if your indoor temperature regularly exceeds 25°C, refrigerate your matcha. If you live in a tropical zone, refrigerate systematically.
The double-packaging technique (for the fridge)
Want to keep your opened matcha for more than 4 weeks? The refrigerator is your ally — but you need to do it right.
The problem with the fridge is ambient humidity and odors. A domestic fridge is full of temperature variations, condensation, and aromas (cheese, onions, leftover food) that matcha will absorb like a sponge.
The solution: double packaging.
Place your can (or tightly sealed pouch) in a reusable silicone bag (like Stasher or equivalent) or an airtight container. Food-grade silicone is air- and odor-tight, washable, and much more durable than a disposable plastic bag. This double barrier protects against odors and fridge humidity. When you take your can out to use it, let it return to room temperature for a few minutes before opening — this prevents condensation on the powder.
Can vs. pouch: which packaging protects best?
The metal can is objectively the best packaging on the market for daily matcha use. Here's why:
It blocks 100% of light — no photochemical reaction possible as long as the lid is closed. This is an advantage that neither glass, plastic, nor a pouch alone can match.
It offers an airtight seal with each use — no need for clips, clamps, or knots. You open, you serve yourself, you close. The gesture is simple, so you do it systematically.
It mechanically protects the powder — no risk of crushing the pouch, puncturing the packaging, or accidentally introducing moisture.
The airtight pouch remains good packaging — especially for larger formats — provided you properly expel air and reseal it carefully after each use.
FAQ
My matcha has turned yellow, is it ruined?
Not necessarily dangerous to consume, but it has lost the essence of what makes good matcha: the chlorophyll is degraded, the aromas are gone, the umami has disappeared. The taste will be flat, dull, more bitter. You can use it in cooking (cakes, smoothies) where other ingredients compensate, but in a latte or usucha (plain), you will be disappointed.
Can matcha be frozen?
Yes, and it's even the best option for long-term storage (several months). But only for a pouch or can that has never been opened. The absolute rule: first transfer to the fridge overnight, then let it return to room temperature for 10-15 minutes before opening — this gradual transition prevents any condensation. Do not freeze a container that you open and close regularly — freezing/thawing cycles introduce moisture each time.
How long does opened matcha keep?
Under optimal conditions (tightly sealed can, moderate room temperature, no direct light): 4 weeks for optimal quality. With double packaging in the fridge: up to 2-3 months without major loss. In tropical climates or in mid-summer: halve these durations and prioritize the fridge.
I take my matcha out of the fridge — can I open it quickly and put it back right away?
It's best to avoid this. When a cold container meets warmer, humid ambient air, condensation forms instantly — just like on a cold water bottle in summer. If you open your can at that moment, these micro-droplets deposit directly on the powder, accelerating oxidation and risking the formation of hard clumps over time.
And if you repeat this cold → hot cycle every day? Each time it's taken out of the fridge, even briefly, introduces a small amount of moisture. After several weeks, the accumulation visibly degrades your matcha — exactly the opposite of what you were trying to achieve by refrigerating it.
You can open your can directly in the fridge — that way, everything stays cold and there's no condensation. This is theoretically correct, but not very practical for daily use.
The best solution: separate your stock from your daily use. Keep the majority of your matcha in the fridge in its tightly sealed packaging (ideally in a silicone bag for double protection). Transfer the equivalent of one to two weeks' worth of use into a small opaque, airtight container that you keep at room temperature, in a dry cupboard away from light. When it's empty, refill it from your stock — by first allowing the can to return to room temperature before opening (10-15 minutes from the fridge; freezer → fridge overnight then 10-15 minutes at room temperature).
This is also the method used by specialty cafes in Japan: the stock remains cold, the working portion remains at room temperature. And when our 100g format becomes available, it will be the perfect opportunity to keep the 100g as a reserve in the fridge and use your 50g cans for daily use — keep them well!
Is a sifter necessary before each use?
The sifter is not just for breaking up clumps — it aerates the powder and allows for more homogeneous dissolution. If your matcha forms small clumps (normal after a few openings), sifting it before preparation completely changes the final texture.
